The following was generated with a simple prompt and a screenshot of the knife from Arizona Custom Knives. It took 5 minutes with ChatGPT, with other models the images will likely be even better or more advanced.
Your situation doesn't look good (I hope I'm wrong) and I hope you are able to recover some of the money you've sent and sign up for a membership here for future transactions.

The trick is to peel it upside down. Turn the post it note stack upside down, then peel the entire stack up from the post it note you want to use while keeping it flat on the table and holding the back of that single post it note flush against the table while peeling. That single post it note will have no curls.

Did they send you a video with your name on the Post It? It just looked like a generic video from what I saw.
