I don't have a knife with elk covers, but our dogs each got an elk antler for Christmas! :thumbsup::cool::D
They gnawed enthusiastically on those most of Christmas morning. Here's a photo with a stag-covered knife I received for Christmas. I don't think I should leave that knife anywhere the dogs could get it - too close a resemblance to their gifts! :eek:

Funny that you mentioned that Gary! My dogs, also, each got an antler for Christmas. I purposely put a stag knife right in front of them to see if it would interest them. They just took a whiff, and looked at me like I was goofy. I guess, "if the shoe fits........"!
 
Funny you guys mentioned dog chews. Living in Illinois, my chances of finding an elk antler shed is slim.
I went through the displays at 2 walmart pet departments and picked 2.
Mounted them on a small drop point I ground out if an old nicholson file.
Annealed tang so I could drill it for a pin. I turned that down in the drill press.
The pin helped keep it aligned while the epoxy set up.
Couple of pics before and after an hour of shaping on the belt sanders.

100% inspired by the work of Horsewright!
