Use those suckers! My elk santoku is the first kitchen knife that I usually reach for. My only "complaint" is that I wish the handled was tapered/scalloped on the blade end. It's a bit thick for any sort of pinch grip.I am a day late so feel free to delete but I was excited to show my bait of Bucks, just in from an esteemed Member off the Exchange. Now the decision... I am wringing my hands trying to decide whether to put these elk-hafted lovelies to use in the kitchen or to safe-queen them (I am leaning toward the latter, as I have a full complement of good kitchen knives). The walnut does have some shading, and I actually had difficulty getting a decent picture as the camera couldn't focus properly on the handle.
I've field dressed many deer with that knife.
