Put one of those small cans of cream corn in your next batch of corn bread. Makes it nice and moist. That and chopped jalapenos go in mine most of the time.--KV

I like chili with beans and no meat
I like chili with meat and no beans
I like chili with beans and meat the best though.

I've probably had chili a hundred ways, and liked them all. As long as it has plenty of cumin, I'm good.

Some of the stranger ones:
• chili with corn instead of beans (corn seems VERY Mexican to me, so OK)
• black bean chicken chili
• chili with peanut butter stirred in

This last one is interesting. A friend and I were talking about chili and I said I always liked chili with peanut butter, and he said, "Me too!" I like the contrast between the spicey chili and the earthy peanut butter, so I usually have crackers or toast with peanut butter to accompany my bowl of chili. When I explained this, he said, "No, stirred into the chili." Well, I've never heard of this before or since.

The chicken chili is so different from red meat chili (we use pork and beef together) that to me, it's really just soup and not chili at all. Still good, though. I've also had and enjoyed chili with rice and beans all together, with plenty of chopped green peppers and onions, and chili mac (chili added to left over spaghetti with meat sauce or even macaroni and cheese).
I agree with John and Jeff about chili. I don't think I've ever met a bowl of chili I didn't like (although I don't like tomato chunks to be too big).
With or without beans (of whatever type),
with or without meat (ground beef, ground turkey, pork sausage, chicken chunks, or other fancier cuts),
with or without other vegetables (corn, broccoli, peas, celery, carrots, or cauliflower),
with or without "carbs" (rice, spaghetti or other pasta, potato chunks),
with or without "toppings" added to the bowl (crackers, croutons, diced onions of various types, shredded lettuce, cheese),
with or without "seasonings" added to the bowl (chili powder of various strengths, hot red pepper flakes, Tabasco sauce).

I could probably live happily ever after eating oatmeal and toast every morning, apples and grapes every lunchtime, and chili and beer every evening!

All I know is the Navy gets the gravy, and the Army gets the beans, beans, beans, beans.....

Definitely NOT sweet, made with white meal, bout 3 inches thick, preferably in a cast iron skillet that was ya Great Grannies, that was bought new by HER grandmother. Cornbread and biscuit pone is broken NEVER cut. Slathered in real butter. Big bowl of soup beans (pinto beans to non hillbillies;) ) big chunk of onion, and a rat tail pepper. Tall glass of cold milk. THAT would make for one happy hillbilly:D:thumbsup:

That sounds about right. My mom and grandma always made their cornbread with white cornmeal, in a cast iron skillet, and served it with either with butter or smothered in black-eyed peas. I know a lot of folks like to crumble up cornbread in a glass and pour buttermilk over it (not something I've ever tried, to be honest, but I can see how it would be good).

My wife's family (originally from Illinois) only had sweet cornbread (Jiffy) when she was growing up, but I've converted her to the good stuff. :D (Funny thing about sweet cornbread is that I don't actually dislike it. In fact, I think it's pretty good... for desert.)

GT, My sister and I stayed with my aunt V one winter and she would ad Oatmeal to the Stews and Chili as a thickener. :)
I guess that makes sense, Dave. I know when I was a kid, my parents would always add oatmeal (or Corn Flakes) to the ground beef when they made hamburger patties, just to make the meat "go farther" in a family of 9. :)

I really dislike the Idaho "state flower":
The goatshead or sandburr.

I "found" too many of them thorns with my front tire yesterday. Had to get a new tube today.
Very painful walk to the bike shop and back home ... even with the cane. :(
I can't walk worth a daRn anymore, but I can still pedal. :)

GT, I'm not doctor or dietitian, but I'd be willing to bet you'd have a long, healthy life based off of that diet. Plenty of fiber, capsaicin, minerals, and vitamins to help with heart health, cholesterol, and metabolism. One could do a lot worse than that diet. I remember reading an article about a 100+ year old woman who swore that whiskey and a cigar were her keys to good health! :D

Well I did well today: had my oatmeal and grapes in the form of oatmeal raisin cookies (only 4), had some chili with my hot dogs tonight, had a cigar at lunch, and going to pour a little whiskey in a little while. How about the Spam and eggs (with plenty of Louisiana Crystal hot sauce), tacos (with "Diablo" hot sauce) and Fritos? Good for me? Had milk and coffee too, like I do every day.

Great to read such a warm (in the good way) discussion about food, even if not necessarily my cup o' tea ;).
When I was active, foreigners working first time in France were always amazed by the themes of our discussions at lunch: food and wine, tradition wants the first talking about work in process knew he would have to pay a bottle of wine. Some who did not care learned it the hard way :D:eek:.

Hope everyone had an enjoyable Halloween. This year was the first year we took Eleanor trick-or-treating. It was also the first year she was able to choose her costume herself. We asked several times over the last couple months what she wanted to be for Halloween, and her answer was always the same: an egg. :D
