Nice beer selection! Dogfish Head rocks! I have a few books written by Sam Calagione the founder, made a few of his recipes too.
I made a pumpkin beer once, it was pretty cool to do... all of the flavor in one comes from spices, you can make a neutral beer from pumpkin. I was surprised... I need to find my brew notes but it likely was the Dogfish Head one.
I started a small Nakiri yesterday... with a press fit wrought iron guard!
I also Ground a Gyuto to 80 grit...it is going nicely! They take forever to grind and I have another day to go. The blade itself is bigger than a lot of the knives I make. There is metal removed everywhere, lots of tapering on the blade and tang. I'm hollowing the tang too, a finished one is so much lighter than the blank it is nuts!
I'm so happy with the progress I ordered 5 more blocks of high end ironwood and 3 blocks of killer Blackwood.
