sorry, have to disagree with you there.

there are real differences in flavor and tenderness among the many cuts of beef.

tederloin/filet mignon is very tender, but being low in fat, has less beefy flavor.

IMHO, the ribeye is the best steak. great flavor, still tender.

YMMV.

since i am cheap, and paying for private school for little resingirl, we don't eat ribeye very often anymore. top sirloin is pretty good.

Seen that in the local grocery. never tried it. i wonder if that is what zymologist was referring to?

cuz 'rib eye' = delmonico; so maybe 'chuck delmonico' = chuck eye steak?
