I "Googled" chuck eye steak: it's called the "poor man's rib-eye". It is just cut a rib or so away from the actual rib-eye.

Seen that in the local grocery. never tried it. i wonder if that is what zymologist was referring to?

cuz 'rib eye' = delmonico; so maybe 'chuck delmonico' = chuck eye steak?

I've done a bit of cowboy work in my day. I never enjoyed turning a bull into a steer... but never once did I consider the 'oysters' as something I'd consider eating. ugh... :barf:

There's way too many good parts of beef to eat... balls just don't seem appetising to me.
