I am back from the party next door. Anyone still standing. I see Jerry and Garth have booked......
 
Actually I would rather use carbon steel blades for kitchen work. They are usually a softer Rc hardness and easier to steel and sharpen, at least for me.

I have a general distaste for anyting stainless unless it's a folder. I firmly believe any fixed blade should be treated with upmost respect, and should include an oiled massage after a hard day's work.
 
I am still around. Just taken a nap here and there. Have to be back at the shop in a few hours. There are benefits to living really close to work. Get drunk at work, walk home, about a mile or so cross country, sleep a bit then walk back. Gotta admit kind of a cold walk though. Nothing a refreshing as a brisk walk through the woods.

Been there, I work with developmentally disabled clients (I run a janitorial crew, night shift), the office is only 12 blocks from my house so I walk it often, and the local quickie mart has good beer and cheap, so I stop for a brew-2-go (you wouldn't believe how many nights I need a beer to de-stress) and finish the last 8 blocks sippin' on an Oregon brew.
 
Now here's the question of the night . . . What knife will you be carrying as you walk back in the woods?!

Knife might be secondary weapon....primary would reach out and put you down before it got too close. Just sayin!
