They make the bags easy to rip open. Other bags should be opened with a knife. But the salt/fat combo of a potato chip will drive one to open the bag faster by ripping it open, verses reaching in ones pocket or belt for a knife.

If you open the potato chip bag with a knife you will have to put your knife away before you eat a chip.
