I did the exact same thing to my 7v and put exactly the same recurve in it. Imho regrinding a 7v to a true V edge was not really worth it. The V ground but chisel edged original state of the blade cut close enough to a true V edge anyway.

Mine is a mini 7b - Had it to a zero at 18 degree - was to brittle

18 degrees per side? The back is already zero ground essentially since it is a chisel edge on a v grind.

Here’s mine with a beautiful mirror edge. Still don’t feel it was really much benefit to regrind it to a V. All I did was double my sharpening work for very little benefit. Oh well live and learn.
