18 degrees per side? The back is already zero ground essentially since it is a chisel edge on a v grind.

Here’s mine with a beautiful mirror edge. Still don’t feel it was really much benefit to regrind it to a V. All I did was double my sharpening work for very little benefit. Oh well live and learn.
