I seem to remember some decent knife action in "The Outsiders", although it's been a while since I've seen it.

The Man From Nowhere has an impressive knife fight. Following a brief shootout, the lead, armed with a Kershaw Blur takes out a bunch of random organized crime thugs, then has a 1 on 1 fight scene with an assassin who wields a Cold Steel Steel Tiger karambit.

Oh! I forgot a favorite one! Cider House rules has a pretty cool knife fight using traditionally to settle a dispute between the workers...
