Fiddlebacks and Food

Anticuchos (ala Alvarez) -- A San Antonio Specialty

MEAT -- enough for four. Choose Steak, Chicken or Shrimp. Dont mix (Recipe will be for steak)
1-2 large Granny Smith Apples
1 large red onion
1-2 limes
2-4 cloves of garlic
salt
crushed black pepper
ancho chili powder
Orange Juice
Cayenne
Chili Powder
Onion Powder

Prep:
Cut meat into large skewarable pieces. Place into a large bowl. Mince garlic cloves finely and place in bowl with meat. squeeze lime juice over meat. Toss meat in lime and garlic. Cover with Salt, Crushed Pepper, Ancho Chili Powder, Onion Powder, Cayenne to taste. Go ligher on the Cayenne then the rest. Pour a small bit of OJ in the bowl (around 2-tbsp). Toss until meat is entirely coated. Cover bowl and place in fridge for 3-4 hours.

Immediately before cooking Prep:
Skin apples and cut into cubes. Place in bowl and cover lightly with Salt and ground pepper. Sprinkle Chili powder to taste over Apples. Sprinkly lightly with lime juice and toss.

Go time:
Cut Large red onion into halves then quarter. Flake off into large skins. Skewer Meat, Onion and apple. I prefer this order O,MM,A,O,MM,A,O.
Cook to Medium Rare temp and Enjoy. I attempted to use my Emberlit this time to cook them for fun but i couldnt get a fire going. Since i just moved i dont have a grill yet, i shamefully had to cook on the stove top. Still turned out good.

The taste of summer. While I don't like the heat, I need the sun to ripen my tomatoes. These are Jet Stars, and they don't have a bit of bitterness to them. Delicious!

A couple weeks ago my wife got the cravings for a Carrot Garlic soup that a good friend of ours gave us the recipe for. I looked and looked and couldn't find the crazy thing, so I made up my own and it turned out great! So great, that today I made it again! I made a batch big enough for a couple meals.

Carrot, Squash, and Garlic soup:

I used an immersion blender to blend all the veggies and added the shredded chicken, cream, and milk last . . . seasoned to taste and enjoyed! I'm looking forward to left-overs tomorrow! If any one is interested, let me know and I'll post my recipe. The wife has made me start writing down my creations because we were eating far too many one-offs.
 
I don't usually use my fiddlebacks for food prep but when we are camping its game on.

Love the Bocote with the unusual grain and trinity pinout. Truly a unique knife.

Its been a long week, but its about to get a whole lot better ;)

Ingredients:

2 x 18oz ribeyes
1/4 cup homemade Montreal
2 x ears of VA sweet white corn
3 x fingers 7 fathoms export only
1 x SR bushcrafter for good measure


Cook everything on BGE (except knife and rum) to taste

With all the traveling recently, I haven't had chance to use my knives much, so I made the most of it whilst at home for a few days. In the Philippines we eat unripe mangoes with either salt or shrimp paste to counter the slightly sour taste. the Woodsman may be overkill but I love using it:)

I am right there with you Brian. A stainless Padre has been on the top of my wish list for a long time. The last one made that I know of was December 2013. I really wanted to buy one for my wife's 50th birthday this month, but that is not looking too likely to happen.

Date night - Steak night. I'm a meat & potato only kind of guy. Only green stuff on my plate is the TT Sneaky Pete in Evergreen Shadetree. :)
