Fiddlebacks and Food

Well, my wife is catching up with her old friend, who's visiting from North Carolina. It's been rainy all week, and slightly chilly. What's a guy to do all by his lonesome after another long week at work? Time for some man stew and catching up on Vikings :D (only at season 2....I don't get to watch TV very often).

I normally just use my kitchen knives when I'm cooking at home, but I thought I'd mix it up and use one of my Fiddies. Along came one of my older friends in the form of Leuku.

I personally favor the mise en place philosophy, so here're the ingredients (well, most, missing beef stock, wine, some herbs, etc.):

I knew I was short on time, so I decided to use my pressure cooker. Some browning, sautéing of veggies (that's possibly one of my favorite part of cooking, smelling the sweet aroma of onions as they cook on animal fat, then briefly cooking the garlic until you sense the change from raw to sweet, then bam! in goes the wine)

Let it cook under pressure for about 60 minutes

What am I gonna do for 60 minutes? (Also did some cardio for 30 minutes then showered)

Finally, hello~ man stew over brown rice and Vikings (using the foldable TV dinner table my Father-in-Law made for me for Christmas!) in the den (aka my man cave, yes that is a Wii U under my TV, I still play Nintendo at 36) :D

As a bonus, I'll leave you with a photo of my wife's Orchid that I took...watching it bloom felt like Spring has come...though it rained all week :(

Looks good! Man stew definitely would be on the menu this weekend for me. We're supposed to have rain all weekend. Alas, I won't be home to make any. It'll have to wait until the next rain storm, probably next weekend with out these last few weeks have gone!

This F2 is what i call "my laser beam". It's my preferred knife for breaking down primal cuts. In this instance it trimmed up and cut a pork tenderloin into medallions.

It's also my "chicken" knife. It's the only knife I use when dealing with raw yardbird. I am sooooo over the top when it comes to safety in the kitchen. This cutting board is reserved for those 2 tasks as well. Immediately after im done with the cutting board i spray it down w/ vinegar for a few minutes & off to the dishwashers "Sanitize" setting. I don't know if that actually does anything but it makes me feel better.

For safety, any anti-bacterial dish soap is good enough to kill anythign living on poultry.

Also, using an end grain wood cutting board is more sanitary than plastics, and they're better for your knife.

More specifically: New plastic and new wooden cutting boards are effectively the same. No bacteria will be alive a short period after washing with proper detergent. However, the difference lies in used cutting boards. Knife scarred plastic boards retain more bacteria and are harder to clean (in fact, almost impossible to do so manually) than knife scarred wooden boards (especially hard woods).

That looks delicious Catalystman. I am going to put man stew over brown rice on the menu sometime in the next couple days. Give me a chance to try out my new Ladyfinger in the kitchen.
 
Broke in my Hiking Buddy on some chops the other night. The two chops closest to the knife are from the hog I butchered back in January. I cut them bone in 2"+ thick this go around. I also "jerked" these with a new Jamaican Jerk rub from Oakridge BBQ, which is good, not as much flavor as my home made jerk marinade but tasty and a lot simpler for when I need a quick jerk fix.





The Hiking Buddy makes a pretty nice little "steak" knife, even at 5/32 it slices very well.




And so the patina begins - I'm just going to let it ride on this one...

Fresh off the rotisserie tonight, pork roast with a Chipotle /mango rub.

On the rotisserie for about 6 hours. So good....

It's my only 3/32" and scandi. It's a laser. I'm generally not a fan of a scandi but I wanted to have at least one in the collection.
 
The Handyman is a hit at picnics. :)

ive got some blackened chicken coming later tonight.

i love cucumber and tomato even though the cucumbers hate me

3 bean w/ garbanzos is good too. i mainly add it to my lettuce salads though
