My BBQ Buddy, I mean Hiking Buddy saw some time trimming baby backs this afternoon. Just went on the kamado, using some cherry over lump for smoke wood.

2 weeks out from the annual rib and chicken throw down...

I guess, this was actually the same cut of meat as yours only without the bone. Pork loin. I've always referred to "bone in" as a chop, and "boneless" as a steak. 👍
