I posted this in under-rated fiddlebacks, but since it's finished, I'll post it here also.
I think the Toboggan falls into the category of under rated knives in the line up. It'd got a good handle for the shortish blade with a good working belly to the blade. It really shined last night when I was deboning the turkey and making a sausage stuffed turkey roll.

After coming out of the oven, I could not help myself and added a little garnish. I definitely need to work on the presentation next time around. Maybe wrap it in a bacon blanket so it doesn't look like a giant grub.

To me anything can be a kitchen tool. My wife sent them through the dish washer afterwards and they now have a "slight patina." The good news is that I can now consider the dishwasher as a parts washer.
