I like it a lot, the wood I was shaving was very very seasoned cherry. Hard as a mofo. I wasn't gentle with them, I was testing the edge stability a bit and they held up well. Still sharp too. I can't see a reason to choose 1095 over 15n20 if there was a choice, 15n20 has all the benefits of 1095 but is tougher and a touch more stain resistant.

When I touch them up on my dmt stones before sending them back to you, I'll see how they respond to it. Should take a shaving sharp edge easily I'm betting.

I would say you've accurately assessed this situation.

1095 would have a small advantage over 15n20 in a high hardness, thin geometry pure slicer, which is really the correct application for 1095.

Outside of that, concerning these companies using "beloved TOUGH 1095".......there is ZERO reason to choose 1095 in those applications. 15n20 or 1075 would be better in every possible way.
 
I found a spare Old Hickory 7", so i did a quick mod, just for fun. So slicey when you convex tem, as i'm sure you know.

I will make a simple sheath to match next, so i can carry it

My newest Carothers Performance Knives DEK2 in brown micarta, with a burgundy leather sheath from duramax duramax that is fantastic!

Good fit and finish on the sheath, with that new leather smell; and the sheath fits the DEK2 like a glove! The knife is one of the sharpest I’ve ever held, and the scales fit perfectly. Very well balanced too!
