What is the blade thickness like on the chef's knife? I was considering getting one' but wasn't sure if it was nice and thin to make a good kitchen knife or a bit thicker to be used more dual purpose?

Nah, it's a true "Chef's knife", and a slicing FOOL.

I just mic'ed mine for you. It's about .081" at the spine (*about an inch ahead of the handle), and about .008" behind the edge.

Thanks for measuring it! It looked thin, but I couldn't find specs on blade thickness or a good picture showing it. 👍

I like the 240 I have. I'll have to order one of these chef knives soon.

Can you imagine having both around the "deer lease" fire with your buddies?

Use the "240" to chop and break-up wood for the campfire, and then the Chef's knife to carve dinner. Win/Win. 👌

Where to begin?



After a few early-2000's "rotary" and "fixed-wing" hops between An Nasiriyah/Al Basrah/Kuwait, I quickly became a big fan of two EPIC "Crewman"/"Aircrew" knives. The Ontario "499" PSK and "ASEK" pretty-regularly rode on my kit back then, and took quite a few "1st Class" flights with me...





A few months back, after seeing his talent with a coupla' "Sawback KaBar-style" knives in The Exchange, I enlisted the talent(s) of our very own cardman cardman (*"Tyler Smith") I sent him a couple of ASEK blade blanks and asked him to make me a couple of robust "hybrid" examples of the two. We went back & forth for weeks on the specs. I even enlisted the help of my "BrainTrust" (* ferider ferider , coolbreezy37 coolbreezy37 , luethge luethge ) in the process, just for good measure...





Anyhow, after all the back & forth, Tyler built me a coupla' bulletproof "Crewman" knives that I humbly dubbed "JSEKs"... (*because I'm "J.J.")






*As far as I can tell, Roland, Damien, and Kyle were pretty happy with the results.
 
I'm up and drunk. (*Shocking!)

So, just for fun...and for those of who've never seen anything like this...here's the "NDT" on an Ontario "ASEK"... (*one of my "Top 10" FAVORITE fixies)

Hollllly Crap, I'm really diggin the way you sculpt and finish your linen micarta! And really like the copper hardware you use, really makes it pop!

Cleaned grinds, sharpened edge.....
Only this left is setting and Flaring the lanyard tube, and adding Maker's mark.






-From previous testing I already know this is the Best chopper I've used. Not even close.....
