My most used, a Grohmann No1/ Canadian Belt Knife. A somewhat recent Outdoor Life article ranked it as one of the best deer hunting knives of all time, stating something to the effect: "Perfectly capable of quartering a moose, yet still never cumbersome while field dressing a deer." Since mine has probably quartered about a dozen moose, a few elk, and field dressed/ skinned well over 50 deer I feel well qualified to agree with that statement.

An odd look for an outdoors knife, but none of that design is random. The sharp point is great for the initial cuts and delicate work, the curved spine makes it easy to keep the point out of paunch and meat, and the edge has enough curve and offset to make it a good skinner. The steel is nothing crazy but its a notable step up from Buck's 420HC, I can quarter a moose without doing any touchups untill after the job is done, at which point it typically only needs a few swipes on the steel to bring it back to arm shaving sharp. Last year I did 1 moose and 5 deer with it (not all animals were mine), it was touched up on the steel between animals but I only put a stone to it at the end of the season, and merely as regular maintenance. On a practical level I'd say thats all the performance I'd ever need.
