Sourdough bread will lower your blood glucose. If you start now, you can have sourdough starter ready in five days to a week. Real sourdough is just flour, water and salt, nothing else added. What you get in “sourdough” from the store or a restaurant is just commercial bread with some citric acid added. That looks so good! The only problem with sourdough is that I like it too much. I'm afraid if I baked that, I'd eat the whole loaf in a day. :oops:

Your bread always looks fantastic Dave :) I usually get mine from Leeds Bread Co-op (great bread and I like to support them), but they've had to close, demonstrating that, if you can, you're far better off making your own :) I'm sure it's a lot cheaper too :thumbsup:
 
Thanks David, I don't know actually. I only discovered that they originally came from Eyam while doing some Barlow history research. I ended up knowing more about the Furness family, and the Barlow family, than I do about the Black family! :D I was there about 18 months ago, and there was a cracking little ale shop near the National Trust/tourist info place just next to Eyam Hall :thumbsup:

Come the summer time, if were all still not dodging drones, I may take a another trip over to Eyam. If ever your over there again try and catch the Three Stags Heads pub at Wardlow Mires and a pint of their Black Lurcher ale.:thumbsup:

I love good bread (who doesn't?) I've been trying to lower my A1c (blood glucose) by only eating 100% whole grains and in moderation. One silver lining of this Stay-at-Home order is that I've lost about 5 pounds just from not eating restaurant food. :):thumbsup: Been experimenting with making rye or almond flour crackers and flatbread, and I might try to see if I can make pikelets. I'll have to see if there are any recipes that don't call for yeast, since I don't have any around here. They'll probably come out more like pancakes, but that doesn't sound too bad.

If it doesn't get too hot this afternoon, I'll do some weeding in the garden.

Never been on a diet but a couple of summers back I inadvertently reduced my bread intake. Even though I wasn't that active at the time either the weight just dropped off me. :thumbsup:

Thanks, Jack. Mostly at home. Went to butcher's and liquor store for some essentials. Grilling hamburgers for dinner in a little while. How things can change in a short time! Take it easy yourself.

Yeah, could be seasonal David, though thinking back, it's actually about 2 1/2 years since I was there. It was popular on the day though, and they had an excellent range of beers at very reasonable prices (though I suppose everywhere is reasonable compared to Leeds). There's a place next door which sells blacksmithy tat, some of it is cast, but there's a lot of forged stuff too, and some quite nice stuff. I went straight to The Three Stags heads after, and had a pint of Black Lurcher! :D I don't get there that often, but it's one of my favourite old pubs :) Even, if their car-park is strangely overrun by semi-wild guinea-pigs :rolleyes: :D :thumbsup:

I'm afraid I haven't David, they were stolen about 25 years ago, along with a huge amount of other stuff :( They were just the Pip, Squeak, Wilfred, but also the large medal/plaque commemorating his death :(

I dare say mate :D I like those old euphemisms, which often sound so innocent. In the olden days in Sheffield, folks would refer to being 'under the clock' as a euphemism for being locked up (usually for debt or drunkenness) in the cells beneath the Town Hall. Since Leeds magistate's court was still in Leeds Town Hall until relatively recent times, it's a phrase I sometimes still hear here :rolleyes:

Some people eat guinea pigs, I guess.

Really? That surprises me. My understanding was that sourdough has a lower glycemic index, and, therefore, won’t make blood sugar spike, but, it may still cause a gradual increase.

It’s funny that sourdough has just come up. On Friday a co-worker gave a video class on how he makes his and got me interested in it. I spent yesterday morning reading beginning information on a website called The Perfect Loaf and plan to begin culturing a starter in an hour or so.

Incidentally, the author of that website has a fancy razor blade holder for slashing the loaf before baking. We all know what I’ll use. ;)

Thanks! So far, so fascinating. It’s impressively hefty: 130 pages, but weighs in at over a pound (498 grams, to be precise) from the nice heavy paper they use. You’d love the full-bleed photography spreads.

Since I've no bread for a Sunday Sausage Sandwich, I'm having Sunday Sausage Rolls! :D :thumbsup:

Ramrodmb Ramrodmb Mark, glad to hear you're in good recovery! It looks, to me, like a goat's head that Linus is sitting on. I see the eye midway down below the handle of the knife, and the nose below that at the bottom. And, the only "sauce" I'm drinking is dark roast coffee. :D

Yes, I've been working on what the Doctors and Dietitians call "My Swallow". We have a Vita Mix and Cindy has been whipping up some killer Smoothies that I manage to swallow quite well. I can also swallow most of my medicines but the bigger pills have to be crushed and sent down the feeding tube. It's a slow process but I'm coming along. I figure I'll be able to pull the feeding tube about the end of June.
Ed, That sounds like not a lot of fun. I have a feeling you're tough enough to handle it, though.;) Not the best time to be requiring return trips to the doctor/hospital, either. Glad you have what sounds like an angel helping you through it.;)

I’m not a doctor, and I didn’t intend to give medical advice, but when I got into sourdough, and ate a lot of sourdough bread, I lost weight. I think it depends what you put on your bread too....
The Perfect Loaf is a good site. Also there’s a forum like this one, The Fresh Loaf, with people at all levels of experience.

It is a deep rabbit hole! I’ve been down it. My advice is get one recipe worked out, rather than constantly experimenting. Trust me.
