Tough question.... I would have to say a jigged bone version of the the #42 Missouri Trapper. But I really like my #48 Improved Trapper. Could live with the Northwoods Madison (2-blade) which is on the 42 frame. The 42 is a medium large do everything folder.

#73 in stag for its useful blade length, great snap when opening, and "just right" feel when gripped. And I like seeing how the patina can change whenever I use it on fruit or other food.
 
Northfield #77 Barlow or #85 Easy Open Bullet End Jack.
(Both spear blades with coping secondary.)
