Thanks Jer, it doesn't have the jimping either. The difference in grind height is actually quite significant isn't it?And a beauty.
It looks to me like the only differences are the grind height and the handle material. Yours might be the HK5 SSH? IIRC.
I think so.Thanks Jer, it doesn't have the jimping either. The difference in grind height is actually quite significant isn't it?![]()

I won't be slicing raw carrots with this one again unless I'm in a mood to chase them.I think so.
Yes, the Savage is definitely the sliciest of the ones I have, actually works very well in the kitchenI won't be slicing raw carrots with this one again unless I'm in a mood to chase them.

Love the case butcher, and that green river Chefs knife is an absolute beauty.I was surprised to find these in my carbon toolboxes. A Herters that looks to me like a Murphy, a CaseXX butcher, a Russell Green River Works chef, and what looks like a modified nickel-plated reciprocating saw blade.

Thank you. The Case butcher is an extra nice one, somehow, and wants a sheath. I've got a slot in the kitcen for the RGR.Love the case butcher, and that green river Chefs knife is an absolute beauty.
Looks to be a 12" blade on that one ?
Do you dip the handles in shellac or something?Thank you. The Case butcher is an extra nice one, somehow, and wants a sheath. I've got a slot in the kitcen for the RGR.
The RGR is a ten-incher, shown below with a twelve-incher I bought cheap from a guy in Shelbyville MI. The blade etch is pretty faint on that one.

These are both from my spar-varnish dipping days. I'm not sure it was a bad idea.Do you dip the handles in shellac or something?
