Lets talk GEC!

If you cut at a 20 degree or smaller angle, would you be sharpening the knife as you use it?
Absolutely and that's why I use this whenever I cut steak to ensure a perfect edge after I'm done 😁

It drives me nuts when I use one of my knives at home and feel it skating across a plate. However, I don’t hesitate to do the same at a restaurant. As a matter of fact, I feel it enhances the whole experience of eating out. I’ve gotten compliments on my cutlery from waiters and chefs alike. After all, who better to appreciate a good sharp tool? Then when I’m home and fixing the edge that I may have dulled, I get to relive the evening.20190113_172823.jpg
 
slightly bigger than the 83, missed the boat on that one, probably gonna miss this one too. It would be nice to get the wood option at IPO.
 
Looking at the production run history looks like these 72s were almost a yearly attraction then suddenly 2016 and nothing. I really hope they toss these in more often because I'd love to get one in yellow rose bone or some nice stag. I'm sure I'll regret not being in on the rat race for this one.
 
I have no idea where to go or look for drops on GEC knives these days. If I wanted a new #72 series, where would I even go to look? I've never seen anything other than kitchen knives, strops, and posters in stock at their website.

I’m hoping for some blue jig bone but agree that purple or hemlock would also be great.
I have missed on the last couple of runs, have to get a Cody! Love the burnt sienna look!
I would also go ape if they surprised us and did all steel construction for both northfields…

Seems like you have to form a relationship with a dealer or two, so they'll keep you on a list or give you a little priority!! Of course we've all talked about the problems of scoring the GEC we want. The only thing I will not do is pay a scalper too much!! It just encourages them!!

I tend to save that option for knives I know I want for sure, like 15s if Bill ever decides to run them this year :rolleyes: Knives I sorta want, I'll leave to fate, which of late has been fickle. but i did ok on 87s even with the mishap, yet here we are, something wicked comes back this way monday!

Easier said than done! After being ghosted (no response after multiple tries), one tends to give up on that approach.

Edit: Some do respond, but their lists are always full.
