Case or Queen have single bladed slimline trappers that should fit your requirements.

Those are good suggestions. I would also throw the Endura in your favorite color and the Police 3.

Boker Urban Trapper. Impossibly light and slim, comes with a deep carry clip. Definitely not a chopper though.

SpydieChef is coming later this year. I love the Syzs Bowie, and I'll bet this will be a great knife.

ZT 0452CF is great, the 2015 Canal Street Produced BF Traditional Knife, a Bocote Serpentine Jack, is very nice.

The case large Texas toothpick is probably about as Slim as you'll find.
This may not be as long, but another really great option would be the Victorinox day packer, it's really slim and ultralight.

Spyderco has many offerings, I'd go Pacific Salt for your intended purpose.
I use mine for food prep every day.

When it's dirty, rinse in water or to the dishwasher and that's it!

You may want to post a price range seeing as people have already suggested knives in the range of $30 to $300

I like this boker urban trapper,is there anything longer in that style, I have Mercator Cat folder, wish it was little longer.

+1 for the Al Mar eagle, I love my HD in zdp-189. 3/8" thick and 3.2 oz, 4" blade.
