Yet another vote for the urban trapper. I bought one (with G10 scales) a couple of weeks ago, and I like it a little bit more every time I use it.
 
I'll have to add some options,

most Spyderco and Byrd offerings check the boxes, too, as well as the KaBar Dozier, ESEE Avispa and Zancudo, Ontario RAT1 or 2. Most have been mentioned before, and should excell at slicing food.
 
You guys are going to get me to order a Boker Urban Trapper . . . just when I swore off buying one. Not that it is bad, no, it’s great. It’s just that I want the Ti and it has, sigh, more round holes.

That’s a cool one. I almost pulled the trigger on that one a couple times. Then the Lucky came out and I decided, for me, a serrated blade for restaurant use might be the way to go so I got a Lucky instead.



Now you are freek’in talking ! I love my Hold Out I for said food prep.

No seriously I hear what you are saying but the OP wants a pocket knife not a sheath knife I suppose .

Those produce knives are useful. My uncle used to own the largest produce distribution warehouse in AZ, prior to selling it to Del Monte. He used to give us all produce knives as gifts, with his Company name on it. Still have mine of course.
