Pfoei...I really have to think about the steels I own since I'm not much of a steelsnob.

I like them all. Toughest use I've put my knives through is cut steak. A ceramic plate will dull even zdp steel in a flash...(tried a caly3 for a while)

In my daily use steel type doesn't really seem to matter.

Vic's aren't 12c27. They are 1.4116 DIN stainless which is the same thing as the Krupp stainless that Cold Steel is pushing on their cheaper knives.
 
thanks for the answer, have you used the Ritter how has it preformed? Also how did the 420HC hod an edge?

Ive used the M2 Ritter quite a bit and love the M2. I havn't used the 420HC knives enough to really have much of an opinion
on it.
