One steel for all your knives whether fixed or folder... What would yours be? (If you can't decide between a couple like me, throw em' both in)

I would choose San Mai with a White steel core, or CPM 20cv.

Stainless as can be, cut for a long time, and take a super sharp edge
 
Gotta give that to Spyderco's ZDP-189. Takes an insane edge and cuts like a chainsaw. Close second would be M4 but I don't really have enough long term experience with it to give a time tested opinion
 
D2. Keeps a usable edge a long time, good toughness, easy to sharpen, semi-stainless.
