One Steel to Rule Them All

52100 does just about everything for my needs.... It's been used in Bladesport's at one extreme, thin slicing knives at the other :)
 
If we are truly talking all knives, including kitchen and cutlery, it would have to be something semi stainless as pure carbon steels rust too easily for those uses, and those are knives I use 10x more often than others. If cost wasn't a consideration, maybe 3v, S90v, M4, or infi. I've heard 80crv2 is somewhat rust resistant so that might work ok too.

I was very impressed with the 5160 of my buck punk, but I really dig CTS-XHP for it's ease of sharpening to a lazer keen edge. but the hottest chick on the block is still M390 :thumbup:
