Carbon: 3v
Stainless: S35vn
Neither: H1

If anyone could tell me what these are made of I could answer the question for sure.


Well almost, the problem is in the traditional realm it's often simply about the knives and not what they're made of.
Can't live without Buck knives and cant live without Victorinox.
There's no choice with Vic not that I feel the need for anything else, but with Buck there is though I cant afford to buy everything in 5160 if it was available for every single model I love.
 
Reading the title I was afraid you were talking about knives, not steel types !

Carbon steel: 80CrV2
Stainless: 12C27

I would miss my Hultafors blades in SK5 though.
 
Stainless: 3Cr13Mov, or maybe Rostfrei, perhaps surgical stainless
Carbon: Chinese D2
