As promised - today the little (well - not so little in capabilities!!) TK2 took on a full beef tenderloin roll to appease the hungry knife nuts at the JK / jds1 Michigan Yurt "Flying Knives" Gathering.
The stage set:
I had anticipated that the knife would be too small to stand up to a whole tenderloin roll, but the nicely sized handle allowed me to carve up the roll with surprising ease!
First remove the side-meat - I use this for steak and eggs or fajitas, or sometimes I add it to some stew meat and make italian beef in the croc pot.
Next I move to the roll - I like to get all of the connective tissue off of my tenderloin.
The tip and very well designed handle give you control and confidence - the TK2 made it easy to get the silver skin off the roll.
I never serve an end piece - these go into the breakfast steak bag.
Ready to cut out the steaks for my JK Friends that will be in Michigan this weekend.

Wow - nice marbling!! These will be wonderful eating in the cool evening around the campfire!
When the cutting was done, I cleaned it up and used my new light-tent to take some glamour shots (such that my ability allows)
The TK2 is now getting a pleasant, honest patina - just like the rest of my well used JKs
I will ask Peter if I can keep the TK2 to take to the Gathering so that jds1 can have a look, and I'll take pictures up there - otherwise it will be on it's way to the next passaround participant.
