Guy, do you mind if I ask about the differences you have noticed between the 3v and Elmax knives you have made? I understand that 3v is very hard and tough, stain resistance is better than many other carbon steels, it holds and edge well but has a tendency to chip. (I had a custom scandi Bushcrafter in 3v and loved it) Elmax seems to be tough as well, with stain resistance being an obvious advantage over 3v. My experience with stainless steels is that often they are so hard that sharpening can be a chore.
Blade design, edge geometry etc all plays a role as well when it comes to each different steel. The edc 4 appears to be outstanding in both steels, but what are your observations?
(Can you tell I'm torn between the two? I keep leaning toward 3v, but only because I like carbon steels and have had experience with it)
