I think Ribeye is overrated.

Yeah, as I've gotten old and fat, I'm learning to appreciate a good sirloin. The leaner cuts sit better. Sirloin and fillet mignon are my preference.

Although a ribeye served as a prime rib is always a favorite.
 
Tri-tip is great. Filet is great. NY Strip can be great, but I've had some that have been a letdown.

I'll take a good Porterhouse when they're on sale.
NY strip here , also enjoy a good sirloin

Salt, pepper, garlic ..... sear then indirect heat for the rest of the cook

I will say to anyone who knows about it..... i really miss my mom's galbi and bulgogi, fantastic korean dishes when made right!
 
I’d have to agree with the leaner cuts being my favorite. Filet and sirloin in that order would be my choice. I wouldn’t turn down a ribeye or strip though. Another reason why venison is good, nice lean meat. That is probably especially true around here where we have the smaller black tail deer that live in the mountains.
