I really like "Wyoming speed goat". If you shoot one as it first stands up in the morning after bedding down in a stubble corn field, get it dressed and on ice right away, and otherwise treat the meat right, it tastes a lot like beef.Even from this side of the world I’ve heard of them as Stink Pigs!
When I cash in my points for WY I’m keen to try antelope.
If you jump it out of the sage, chase it 4 or 5 miles, get a bad hit on it, chase it another couple miles, shoot it a couple more times and finally kill it, drag it for a mile then gut it badly, strap it to the roof of a 61 Dodge and drive to Arkansas with it in the sun... Well, it'll taste like some folk's venison. Or maybe peccary.
Nothing against Arkansas, mind you.
