IPAs are best with spicy and/or pungent food. If you're not a huge hop fan, try them that way first. IPA and kimchee, for example: awesome. But spicy salsa and chips will do. :)

21st Amendment's Down To Earth Session IPA is phenomenal. Not an IPA, it's misnamed. It's smack in the Sierra Nevada Pale Ale category for hoppiness, but tastes way better due to a malty backbone and good late hopping. Drinkee.

I'll keep trying food/beer combinations, I do like the SV Pale Ale, a quality brew indeed.
 
Elysian is delicious!!!!

I wish I was as close to the Elysian brewhouse's as you and and Matt are.
You could probably find me there everyday after work.
That Taphouse in downtown Seattle is a place of wonder as well. I forget how many beers they keep on tap, but it's downright riculous.

2 blocks from work, haven't been tasting there yet. That Taphouse (160 beers on tap) sounds amazing but again I haven't visited yet.
 
I like IPAs, there are just too damned many right now though. Every brewery out there thinks they need a version.
 
Alaska's APA isn't too bad. I can drink that one, and they make a jalapeno IPA that's pretty dern good.

Then again, some have described the beers I like as malty sludge. :D
 
Normal IPAs are often too bitter, but apparently if I get Imperial IPAs the extra alcohol overwhelms the bitter and makes them taste more like a normal ale, albeit quite rich. Also, well, 9% or higher for Imperial beers.
