In an unrelated topic, One of our maker 'heads made some 'dashis. I managed to get one and I've loved it. Today I decided it was time to sharpen it. This was a mistake. I pulled out the KME and got to work. I figured I would start by determining the angle. 20 degrees, nope. 18 degrees, nope. 19 degrees, nope. 19.5 degrees, nope. 19.7xxx degrees, YUP! That only took me about 10 minutes to figure out. Now lets get to work... 140 grit diamond stone. Oh this is not carbon steel. 25 minutes later still no burr. WTF?! What the hell steel is this?! Another 30 minutes go by, JUST starting to get a burr. Let's go for another 10 minutes and see what's going on. WHAT?! WHERE IS THE BURR?! It's gone! Ok, let's just flip it and maybe get the burr from the other side. Wait, the angle is different here. I'm not even hitting the edge, I'm hitting the shoulder only. CRAP! Ok, lets just see... This one the angle is 21.1xxx angles. Ok, now we are working the whole bevel. 15 minutes later, HEY there's the burr! I'm NOT going any further I don't care if it's only a tiny burr... Wait, why is the burr only on 7/8ths of the length of the edge?! SON OF A !!!!
Basically this was what my next 4 hours was like. However I managed FINALLY to get it sharpened. I would love to give a shout out to Daizee... YOU SIR ARE A SON OF A BITCH!
