To my eye, the Schrade Walden 804 is the quintessential whittler. I like everything about it: its compliment of blades, its lines, and its size.

This one's in Delrin. The same knife sporting Schrade's luscious peachseed bone and having full blades would pretty much be my grail.

Here are my two Case whittlers, a 6383 and a 6380:

I modified the pen blade of the 6383 to be a coping blade, which is my preference for the third blade when there's a small clip available.
