An idea that may or may not appeal to you. One of the, in my opinion at least, coolest and best designed working knives is the Randall/Bowles skinner. I don't know if anyone else makes something like it or how difficult the grinds are but...

I like that. I like that a lot.
That was a knife that I spent a few years trying to get it the way it was in my head. I must have drawn it a thousand times and modeled it up a hundred. I still have it, it was kind of a nemesis. It's comfortable and feels just right to me. It was an early attempt at a hamon which came out way too high.
I always considered pairing it with a small bird/trout type blade in a leather pouch. I think you could dress just about anything with that combo.
