I haven't had the guts to try the EP 120 stone. My 220 and 400 stock EP stones were nothing short of horrible. I actually threw them away, and now I use Congress Tools Moldmasters (about $3ea!!!!) in 220 and 320 grits. These are SiC stones and wear very slowly and almost work to quickly for 1095's and the like. I used them on ZDP and had favorable results, but I still crave that Atoma 140, it's just so sexy.
Also, I am with you on the toothy edge bit for true super steels. My mid range steels like ELMAX and CPM D2 and S35VN and 154CM/VG10 and M390 get mirror edges usually. Stuff like CPM M4, and regular D2, and ZDP-189 all get an edge finished to about a 1k Chosera followed by a balsa wood strop with 0.5 compound. My ZDP Delica cuts like a bandsaw with this kind of edge.
