Traditional French Fry day

One thing I just don't understand is why the traditional French knives don't have a kick to protect the edge from hitting the inside of the gutter when closed.

The French are very clever, practical people. They brought us the Mirage jet fighters, after all. One would think they'd include a kick on their blades.
I didn't realise before coming here that Americans tend to slam their blades shut. The sound of a blade slamming sounds like nails down a chalk board to me. It's not hard to shut a knife with care.

French knives seem to recess the blade tip a bit further in too, maybe it's designed to help with proud tip issues? Not sure.

Oh, sorry. It's a Garonnaise knife made by Le Sabot, a French regional knife.

I'm a bit frustrated by the inconsistent quality control. The other one that arrived had the medallion offset and in a different location.

Blade and pivot are just fine, though.

That is a bit average. I recently got an Issard GR Donjon knife. The fit and finish leaves a lot to be desired but it's sharp and locks up tight so I guess that's what matters.

It's also cow horn. I grew up on a farm and use a horn for hunting but guess I haven't trimmed one down for knife scales. Having said that one side looks like horn, the other is translucent and I have concerns its synthetic.

About the horn, I have seen the same on a Laguiole from the same company. Glad you mentioned that, I thought I just got ripped off.
 
Could we have a picture, I'd like to make an opinion? It is hard to believe that. On unexpensive knife they use pressed horn, not the tip.
