Traditional French Fry day

I did a search on you tube. I don’t know which video in particular you mean (there are several). I going to take a guess at this one.

I DO like that one, but . . .

The one I was looking for is this . . .

I had looked for days and then it appeared after your reply.

Here's my Alpin, newly arrived from France. Some oil on the joint and covers, a bit of polish to remove the active rust. Just needs a sharpening and she'll be ready to do yeoman's work.

Here's a pic of the tang that I know my friend KnifeHead KnifeHead will appreciate.

Thanks Charlie. I had a feeling you'd appreciate that.

Although I prefer a well-made knife with fine materials and superlative construction, I'm also a sucker for knives with interesting details like a square and flush joint.

Studying this one at my desk today.

I have got to ask, do people actually use those exquisite Laguiole knives? Or just look at them like museum pieces?

I have a few really fancy ones and I actually keep them in soft slips, just take them out from time to time to appreciate them

I’m sure some do, but not me. That is one of the reasons downsizing my collection to users and thrifty inexpensive knives allows me to enjoy using more. But that’s just me. Your opinion may vary.

I was wondering the same.🤔
I also wonder if the file work on a backspring makes them weaker and more likely to break. 😷

That's a good question. I have a handful of laguioles now -- vintage pieces, current factory offerings, artisanal made, and even a refurbished knife. Three of them have already been put to use, with plans to add couple more once they have been sharpened. The remaining ones still get admired and will probably be given away as gifts at some time.

Use them, fondle them, put them up. Do whatever makes you happy. They're your knives after all.
