Thanks for the illustration and info Jolipapa Jolipapa :thumbsup: Always liked the look of those Donjons, real vine chopper and great to enjoy a < coup de rouge > with (in the wine context not the political one, although....) just as nice as with a White Burgundy too😍

Many subtle variants in blades it seems with French cutlery.
 
Here are a couple of French knives I got myself for Father's Day last month.
A stainless Opinel No. 8 with fancy laminated birch handles. It cost more than I've typically spent for an Opinel, but it sure looks good to me.

I've admired Le Thiers pattern for quite some time, but the models with wood or horn handles didn't really fit my knife budget (unless they were very small). But I recently saw this Coursolle brass Le Thiers model at a price I could justify (with a Father's Day discount), and at 4.73" closed, it's certainly not small. And it has some filework on the spring.
