Traditional French Fry day

Here are my two newest entrants for Traditional French Friday, thanks to the generosity of Âchillepattada Âchillepattada . Thank you again Jean-Marc!

The first is a 12 cm from Pierre Yves Joyeux with a carbon steel blade and boxwood covers. Though comparatively slim, this knife feels solid. I chose boxwood because I wanted this to be a more simple (looking?) knife that hearkened back to the laguiole's simple peasant origins. It has no guillochage and a very simple mouche.

This second knife is a gift from JM. 10 cm with a 14c28 blade and ebony covers, it is the smallest laguiole I've owned. I can't believe how much of a difference 2 cm makes in size.

I'm going to enjoy using these knives. The only issue is sourcing some duck fat to rub on the Joyeux so it develops that beautiful, honey color.
