Traditionals and Cast Iron Cookware

I've got a cast-iron pan that's good but since it has a wooden handle I can't put it in the oven for conditioning. Any tips about how I can improve the surface? I wash it only with very hot water(once cool) and never soap. Same with a carbon steel pan from Spain, only that does have metal handles.

Some simple but simply great meals being shown here

Thanks, Will
Just use it! I fiddled around with different techniques for a while. What ultimately worked best was to just use it. I threw away all Teflon pans and used the cast iron once or twice a day for a couple of weeks. It’s beautiful now. My skills improved alongside the cooking surface is the pan.

Nice looking pan, how do you like the slip over covers?

Just got them. My initial concern when I ordered them was that they might be too loose, and cause a heavy pan to twist in your hand, but they don't at all. They fit snugly and are just the thing for moving a heavy pan around.

I had a silicone one given to me a few years back. I never really got the hang of using it, for the exact reason you mention.

Yeah, I had the same experience with a silicone version. It didn't last long before it got tossed. Seems like the inner, rough side of the leather creates more grip on the handle, where the silicone was too slippery inside.

I was looking for grips for my cast iron and tried these. I had an old pair of cheap leather work gloves, so i cut the fingers and thumbs out, surprisingly they work really well. Can't be used in an oven, but for moving pots and pans around they are okay. Something you may want to consider. :).

I handle heavy pans with two hands using old style hot pad mittens. After carpal tunnel release neither of my hands are quite what they used to be when I won arm wrestling contests. Which to be honest was a long time ago - about 35 years I'd guess.

Glove fingers - brilliant solution!

Giving this thread a kick along 😂 a toasted chicken, tomato and tasty cheese sanga. Sliced the tomato's with the Opinel. They are the best slicer on the market, and for the price definitely the best, and so easy to sharpen to a razor edge.:thumbsup::thumbsup:
