What do the custom makers sharpen with?

yep there is nothign like a single bevel or razor thats been worked u through the grits. if i could hold angles as well on a ston as i could on a grinder all blades with be stoned
 
For 99% of my knives, I sharpen with a 2x72 (usually 220, 320, or 400), and then knock the wire edge off with a buffing wheel, light to medium compound.
I also have a set of paper wheels, but I rarely use the s/c side to establish an edge. If anything, I'll just use the rouge side to polish my edge.

Honestly, a mildly used 220 belt followed by a buffer is enough for me to get most knives sharp enough to pop arm hair.

Now, obviously I wouldn't use this method to hone a straight razor, but for a quick and effective "utility" edge, it works just fine.
