What is the largest knife you actually use?

Reread the op.

He mentioned field dressing, general camp use, including food prep.

He excluded kitchen knives, specifically.

Not a contradiction on his part, just very specific rules.

Apparently, he has an older sister who beat him up, er trained him a lot.
It was a Drill Instructor at MCRD San Diego. Talk about specific, they're the very definition and are damn good teachers too.
 
It's worth checking out. It looks so simple and unimaginative, but the thing is surprisingly versatile. I haven't field dressed anything with it, so I can't speak to how it works with something like that, but for camp chores and most bushcraft needs it does a really good job.
Less specialized, and much thicker for other tasks, but the profile is not far off a Japanese (kitchen) kiritsuke. And as far as cutting meat, fish, bird, vegetable and fruit in the kitchen I prefer a kiritsuke to the typical chefs gyuto.
 
I have used this USA made Kershaw Skyline more than any other knife in recent decades. Unsophisticated, fairly lightweight. Never lubed - just cleaned. Sharpened it once recently. It is still tight with no play in the pivot/lock whatsoever. One of the cheapest folders I have ever bought and it just keeps on going.

The Terava Skrama 240 is my most used and biggest knife outdoors on the woodlot, where there's always new brush to be cleared.

Before I got the Skrama (at the suggestion of a member here), the Joker Nomad (seen below 2nd in from left) and KA-BAR Becker Companion BK2 (seen below 3rd in from left) got a lot of use on the property, and still get used from time to time. The Cold Steel SRK Search Rescue (seen below 2nd in from right) has been a knife looking for a purpose, after getting moved out of various roles by better blades it's now being used as a garden knife. There's also a Morakniv 749 (8" blade) that's kept in the chicken pen food/supply shed because it's just the right size for cutting melons in half for the chickens.

I saw 3 or 4 mentions of bussekin. My earliest memory of the forum is that they were the ultimate big blade.

That's precisely what I thought, when I joined this great forum more than 10 years ago. Then, I discovered the world of custom knives and never got back.

So .... the big question is 200 or 240???? 😁
I got my hands on a 240 during a pass around and liked it, despite how simple it seemed the thing just worked. The only part holding me back was the size, it was too large for my needs. I told myself if they ever released a smaller version I would be all over it, when the 200 came out I kept that promise and bought one.

I'm not sure what your use case would be, but if you want to read a review I did on the 200 about 5 years ago check out this link. Maybe you'll find something in that to help make your decision.
