What "Traditional Knife" are ya totin' today?

I really enjoy hearing about daily life in a rural town, Ed (and the knives that accompany it). Having driven through there (and Lakeview and Klamath Falls) many times I can picture your days when you describe them.

To some it would be a pretty mundane life but for me it's exciting. I mean, how many people can go to the auction yards or a local ranch one day and then go to a restaurant for beef the next day knowing it had been processed from the cattle that had passed through a day or so ago. The people that run the Brass Rail (a Basque restaurant) here in town raise the very same lamb that is on their menu every night. When we go there for lunch on Thursdays, most of the time you can hear them processing the lamb for that night and the weekend out in the kitchen. When ya get lamb stew there, ya know it's fresh.
