I have caught the bug for French regional knives from Stefan. Recently got the Chambriard Thiers Compagnon and the quality is just outstanding.

My wife ordered this for me for Christmas of 2014. The blades are perfectly centered and there is absolutely no rub. Snap is decent. its a heavy knife but the blades are perfect size, not too big or too small, and feels great in the hand.I too have been eyeballing the Sowbellys. Very nice pattern and its my favorite Chesnut Bone CV. Just have to find one in person with the right color jigging and snap to it.
