Or green apples, I used a new 1095 blade for 2 weeks eating my daily apple at work and it was black as night! even when I was wiping the blade right after.

I have this combo today.

I just got the bottom one of these knives. Can't stop raving about it, the pattern is Heavy Old School. GEC 85. My one has Mammoth like stag with cracks and veins running through it, the sides aren't matched BUT I'm lucky to like both of them and they are the same shape/thickness which is important. The pull, W&T, finish,longpull and swedge all first class. In production knives, nobody betters GEC in my experience.

This knife is SO SHARP. Would you believe I did all that carving of seasoned beech and the blades still pop hairs and push cut newsprint???

Congrats on your grandmother's 90th and nice whittling. Is that the factory edge?

Thank you Jake. Its a convex edge I did with my Kalamazoo 1SM, finished with buffing compounds and leather belts. Such a sharp durable edge for whittling
