What "Traditional Knife" are ya totin' today?

The lamb turned out well yesterday--not much left of it today! The WSK handled the carving expertly. For Micarta Monday, another from Dave Beck--a Green River style knife, 1/8th" stock, 5" blade, O1 and antiqued ivory micarta. My wife has made it her own--it lives in a kitchen cabinet and handles all kinds of food prep.

... I much preferred the 2 1/2 filet mignons (or is that "filets mignon"?)--rare--that I also had.

I had a hiccup when I read "rare", then I remembered you're speaking of beef meat. Here filet mignon refers to pork meat.

Be careful : n Belgium if you order a filet américain they serve a steack tartare (raw minced steack) :eek::D
 
This Pal cattle knife was in my pocket throughout the Easter weekend, bit chunky but capable of handling any of my cutting needs.
Switched to a couple single spring/dual blade slims today, Charlie's HJ-10 and Robeson Shuredge. I really enjoy knives with no half stops that are smooth opening and have good snap, these two each fill that criteria. :)
