Looks great John. I have a question. How did you thin out your stock behind the clam shells? Did you use a mill or do it by hand? Also what are your orange hold downs made out of? Thanks

two new knives

This knife is 8 1/4" long with a 4 inch handle and weighs 3.6 ounces. The handle is made from hard maple. I used high gloss polyurethane to finish the handle.

This knife is 8 1/4" long with a 4 inch handle and weighs 3.2 ounces. The handle is canary wood. I used high gloss polyurethane to finish the handle.

Both blades, 4 1/4" long, 4" cutting edge, are 0.45" thick at the spine and 0.003" thick at the edge. 1.2519 high carbon tool steel (C:1,15%/Mn:0,4%/W:1,4%/Cr:1,3%/V:0,25%) hardened and tempered to a final hardness of Rc64-65, The edge was then ground to 8 degrees per side then hand worked to razor sharpness. I purchased the steel from these folks https://www.schmiedeglut.de/tungsten-steel-knifesteel_2.

HI Clint. The shells are dished out by hand. They're concave...just like a real shell. I start with a carbide cone shaped burr and rought it out, then it's just a WHOLE LOT of hand work to smooth it all out. I utilize files I've ground and bent to suit me, sanding sticks, cratex points......whatever I need to fit the shape I'm going for.

The orange clamps are made from g-10.

Looking good, Scott. Isn't that steel some good stuff? I was commenting to my wife about our 1.2519 petty from .06" stock, how we've been cutting fajitas up with it every week for 2 years and it has yet to be touched up on anything. I do try to minimize contact with the cutting board with technique, so it's not too surprising that the edge is still incredibly sharp. I simply hand wash with water and dish soap, wipe dry, back on the magnet rack. It has an awesome patina right where the protein contacts the blade.
 
Just got these three D-2 blades hand sanded to 600 and ready for heat treat. I know it's an important part of the process but man I really hate hand sanding.

The silver twill texalium is super grippy with the sandblasted finish. I usually polish it to a gloss but really like the feel.
